The other day at N+I I was talking to a Joel Snyder and Jan Trumbo about my love for BBQ, my wife makes some killer BBQ pork ribs and I said I would share the recipe she uses; we found this recipe on the internet a few years ago and it’s been a hit ever since.
It starts out with the rub which is made up as follows:
1 T. garlic powder
1 T. onion powder
1 T. salt
1 T. cayenne pepper
1 T. black pepper
1 T. white pepper.
1/2 C. brown sugar
1/2 C. paprika
Simply mix all the ingredients together and rub the pork ribs (we get our ribs from COSTCO) with it, wrap in plastic and put them in the fridge we normally do this the night before we cook.
The rub might be a bit hot for some, we usually do two racks one with a little less cayenne for guests who don’t like the spice.
At least an hour before you are going to cook be sure to take the ribs out of the fridge.
Preheat your oven to 250ºF and cook for about 4 hours.
Place a cake pan of hot water on the lowest rack. You may need to add water to this near the end.
Place the ribs in the oven bone side down . . . you will not turn these over (this allows the fat to 'travel' through the meat and leave all that flavor behind)!!
Place them on a wire rack directly above the water pan and going in the same direction… you want to catch any drippings in this water pan.
After 1 1/2 hours of cooking (not before), mop the ribs with a mixture of 3 parts apple juice and 1 part oil. Do this every 1/2 hour until done.
To test for doneness, you can look at the bones and watch for the meat to pull back from the ends.
Finally about 20m before we are ready to eat we put them on the BBQ and apply any sauces then.
